Baked Pasta with Baby Bella Mushrooms...

Hello winter.
Hello comfort food.
Hello stretchy pants {because of the comfort food}

Hello... baked pasta with baby bella mushrooms!

This recipe is so simple it's silly. Really... just keep reading and you will see....

Here's what you will need:
1 package of fresh sliced "baby bella" portobello mushrooms
8 oz penne pasta
1 jar of pasta sauce, any kind will work, just choose your favorite!
8 oz shredded mozerella cheese
1 tablespoon butter
1 tablespoon olive oil
sprinkle of fresh or dried basil

Step one:
Add the butter and olive oil to a large cast iron or oven proof skillet, heat to medium. Next add in the mushrooms. You can chop them up if you like... I like large slices so I just leave them as is. Saute the mushroom for about 10 minutes until they are tender.

Step two:
In a another pot, boil pasta to al dente, and drain. Add cooked pasta back to the cooking pot and stir in the pasta sauce.

Step Three:
Carefully pour pasta & sauce into the skillet with the sauteed mushrooms. Stir everything together and top with shredded mozzarella. Sprinkle the basil, and a little salt and pepper on top and bake at 425* for 25 minutes or until the top is golden and  the cheese bubbling.

It's so simple... it's so tasty... I can't promise you won't have dreams about it :)
