Summer time in our house means garden fresh veggies.....lots of them.....and nothing makes me happier about our garden than seeing these.....
They are the star of this week's Tasty Tuesday recipe.....There are so many ways to cook them but my new favorite is this:
Green Beans with Bacon and Blue Cheese
1/2 lb of fresh green beans (trimmed)
4 slices center cut bacon
2 oz crumbled blue cheese
Step 1: Fry bacon in a medium sized skillet until crisp and all fat has been rendered. Remove bacon to drain on paper towels and leave just enough of the drippings to lightly cover the bottom of your skillet. After the bacon has cooled, crumble into small pieces.
Step 2: Wash and trim green beans. Add them to boiling water and cook for 5 minutes. After cooking, drain and immediately transfer them to a bowl of ice water to stop them from cooking further. (They should be very bright in color and still have some crisp left to them)
Step 3: Heat skillet with bacon drippings back to medium heat, drain cooled green beans and dry them off with a kitchen towel. Add the green beans to your skillet, stir in blue cheese. The cheese should begin to melt and become creamy as you stir. Toss in bacon crumbles and cook all together just until heated.
After putting the green beans in a serving dish, top with a few more blue cheese crumbles and you are ready to serve! The taste is out of this world...I really hope you'll give this one a try!
