Summer is in full swing....our garden is finally growing....and the good food just keeps coming!
This is one of our favorite summer recipes, almost everything it takes to make it comes right from our own yard....and that, my friends, makes me smile!
Summer Creamed Corn
4 ears of corn (removed from cobb)
1 small red bell pepper (diced)
2 table spoons butter
1/2 cup heavy cream
salt and pepper
Add butter, corn and red bell pepper to sauce pan. Saute for about 5 minutes, then stir in heavy cream. Bring to a boil for a few minutes and then turn down to a simmer. Add the fresh thyme and salt and pepper...let simmer for 10-15 minutes and you are ready to enjoy!
