Strawberry Muffins with Strawberry Butter
makes 10 muffins
1 1/2 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 cup sugar plus 2 tbsp
4 tbsp butter, melted and cooled
1 egg, beaten
1 cup strawberries
Heat oven to 400, line muffin pan with paper muffin cups or butter and flour your pan.
Dice strawberries and toss with 2 tbsp sugar, set aside
In a large bowl, add flour, baking powder and salt. Mix with a fork (or sift these ingredients into the bowl). Stir in sugar. In a separate bowl, mix melted and cooled butter, egg and milk. Pour wet ingredients over dry and whisk until blended. (Mixture will be a little lumpy)
Add strawberries by folding them in just enough to combine all ingredients.
Divide the batter into your muffin cups (at this point, I sometimes like to sprinkle a little sugar on the top of each muffin) and bake for 18-24 minutes.
To make the butter all you need to do is add 2 tbsp of diced strawberries to 4 tbsp of room tempeture butter, mash together with a fork until blended.
